S’mores Cookie Sandwiches

What do you get when you combine cookies and marshmallows?  S’mores Cookie Sandwiches!

After making this fun S’more Caddy a few weeks ago, we started experimenting with We also have a few camping trips planned and

And nothing says summer better than s’mores!  But I’ve switched things up a bit to make s’mores even better.  I didn’t really think that was even possible until I tried these S’mores Cookie Sandwiches.

Instead of using graham crackers, we’re using Peanut Butter Cup Cookies and let me just tell you – it’s pure deliciousness!  I already knew you couldn’t go wrong with chocolate and melted marshmallow but using chocolate chip cookies instead of graham crackers is AMAZING!

I’m not sure this really counts as a recipe but I’ll give it to you anyways.

Ingredients:

  • Keebler Chips Delux Cookies – Peanut Butter Cups (or your favorite cookies)
  • large marshmallows
  • chocolate bars, broken into smaller pieces (optional)

Directions:

Step 1:  Lay a row of cookies out on a plate face down.

Step 2:  Add a chocolate piece to each cookie.  This is optional because of the chocolate chips in the cookies.

Step 3:  Toast your marshmallows or place marshmallow on cookie and microwave for 10 seconds.

Step 4:  Place another cookie on top of marshmallow to form a sandwich.

And, I couldn’t stop there!  We also made s’mores with these Coconut Dreams that I found at my local grocery store.  Have you tried them yet?  If not, you don’t know what your missing.  So, since I was craving s’mores and Coconut Dreams, I just had to see how it would taste if I combined the two.  Guess what?  It was definitely one of the best ideas I’ve ever had.  These Coconut Dreams S’mores Cookie Sandwiches combine everything I love: coconut, caramel, chocolate, and marshmallows.  Yum!

Now it’s time to ditch the screens and show our little ones the benefits of a summer filled with outdoor fun and lots and lots of s’mores.
