There’s nothing better than a big pot of chili during these cold, winter months and I have the best chili recipe for you. This creamy Ranch Chicken Chili is our new favorite chili recipe. It’s hearty and full of flavor – everything you’re looking for in a delicious chili recipe. And, the best thing about this recipe is you just have to dump everything in the slow cooker.

If you love easy slow cooker recipes – this is the recipe for you! This recipe is perfect for busy weeknights because it takes just minutes to prepare in the slow cooker. It’s also a great weekend dinner recipe because it feeds a crowd and you’ll still have plenty leftover for lunches.

Ingredients needed to make Ranch Chicken Chili

First, don’t be alarmed with the long list of ingredients. Some are just spices that you probably already have in your pantry. And, if you don’t, you’ll want to stock up now because you’ll definitely be making this recipe again soon. In fact, just buy two of every ingredient on this list now because you’re going to love this easy slow cooker recipe.

  • Chicken breasts
  • Black beans
  • Corn
  • Diced tomatoes and green chilies
  • Jalapenos
  • Chicken broth
  • Ranch seasoning
  • Spices (chili powder, cumin, paprika, onion powder, garlic powder, salt and pepper)
  • Cream cheese
  • Cheddar cheese

How to make Creamy Chicken Chili in the Slow Cooker

This is my kind of slow cooker recipe! No prep work required. Just dump all the ingredients in the slow cooker (except the cheese and toppings), close the lid, and let your magical slow cooker do all the work.

I like to stir the ingredients after about an hour to mix the cream cheese and other ingredients together.

Let everything cook on low for 6 hours or on high for 4 hours. Remove chicken, shred, and add back to the slow cooker. Add shredded cheese and cook on low for 20 minutes or until cheese melts. Serve with your favorite chili toppings.

Ingredients
  

  • 3 boneless chicken breasts
  • 1 15 ounces can black beans, drained
  • 1 1/12 cups frozen corn
  • 1 can diced tomatoes and green chilies undrained
  • 1 jalapeno diced and seeded (optional)
  • 1 cup chicken broth
  • 3 tablespoons Ranch seasoning or one packet of ranch seasoning and dressing mix
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 8 ounces package cream cheese
  • 1 cup cheddar cheese shredded
  • Garnish with cheddar cheese tortilla strips, and/or cilantro

Instructions
 

  • Place chicken in slow cooker.
  • Add the rest of the ingredients except cheese to slow cooker and cook on low for 6 hours or high for 4 hours. 
  • Remove chicken and shred. Return to slow cooker. 
  • Stir in cheddar cheese and cook on low for 20 minutes or until cheese melts. 
  • Serve with favorite toppings.
