Slow Cooker Ranch Chicken Chili

This Slow Cooker Ranch Chicken Chili is sure to become your family’s favorite chili recipe! It’s heart, full of flavor and so easy to make thanks to your handy dandy slow cooker.

Ingredients

  • 3 boneless chicken breasts
  • 1 (15 ounces) can black beans, drained
  • 1 1/12 cups frozen corn
  • 1 can diced tomatoes and green chilies, undrained
  • 1 jalapeno, diced and seeded (optional)
  • 1 cup chicken broth
  • 3 tablespoons Ranch seasoning or one packet of ranch seasoning and dressing mix
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 (8 ounces) package cream cheese
  • 1 cup cheddar cheese, shredded
  • Garnish with cheddar cheese, tortilla strips, and/or cilantro

Instructions

  1. Place chicken in slow cooker.
  2. Add the rest of the ingredients except cheese to slow cooker and cook on low for 6 hours or high for 4 hours. 
  3. Remove chicken and shred. Return to slow cooker. 
  4. Stir in cheddar cheese and cook on low for 20 minutes or until cheese melts. 
  5. Serve with favorite toppings.
