My Berry Croissant Bake has been very popular and I know everyone loves pumpkin recipes so I wanted to create a delicious pumpkin recipe that also used croissants with a pumpkin spice cream cheese filling. And, let me just tell – this one might be better especially if you LOVE all things pumpkin.

My husband is a huge pumpkin fan and he is charge of taste testing every pumpkin recipe I post to make sure there is enough pumpkin flavor in the recipe.  As soon as he took a bite of this pumpkin breakfast bake, he immediately said “YUM”.  And, I guarantee you’ll say the same.

What I love about this Pumpkin Croissant Bake

There are so many reasons to love this tasty breakfast dish. First, it’s so easy to make and only calls for a handful of ingredients- which you know I love. I also LOVE that I can prepare it the night before and refrigerate it overnight. But guess what? If I need to make it quickly, I can also make it the day of and let it set for 20 minutes before baking. It’s perfect for an easy holiday breakfast and great for a quick weekend breakfast with the family. I especially like to make it Sunday morning so I can have leftovers during the week – if there are any.

How to Make Pumpkin Croissant Bake

First, this recipe calls for croissants that have already been baked.  You can buy croissants from your local bakery or use the canned croissants but they need to be baked ahead of time.

Once you have your baked croissants, cut them into one inch cubes and add to baking dish.  In a medium bowl, mix together pumpkin spice cream cheese, pumpkin spice coffee creamer, eggs, and pumpkin spice seasoning until well combined.  Pour cream cheese mixture over croissants and sprinkle with chopped pecans.  Refrigerate until ready to bake.  Sprinkle with powdered sugar before serving.

Ingredients
  

  • 4 large baked croissants cut into small pieces
  • 1 8 ounce package Pumpkin Spice Cream Cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup Pumpkin Spice Coffee Creamer
  • 1/2 cup pumpkin puree
  • 1-2 teaspoons pumpkin spice seasoning depending on how much pumpkin flavor you want
  • 1/4 cup chopped pecans optional

Instructions
 

  • Preheat oven to 350 degrees. Spray a 9 x 9 or 8 x 11 baking dish with cooking spray.
  • Add croissant pieces to baking dish.
  • Beat cream cheese for 30 seconds with electric mixer.  Gradually add in eggs, vanilla, and coffee creamer.  Continue to mix until well blended.
  • Pour cream cheese mixture over croissants.
  • Let rest for at least 20 minutes or refrigerate over night. Sprinkle pecans over breakfast bake before placing in the oven.
  • Bake for 35-40 minutes or until golden brown and set in center.
  • Serve warm with powdered sugar sprinkled on top.

Notes

  • Make sure you are using croissants that have already been baked.
  • This recipe can easily be doubled in a 9 x 13 pan.
