4 cups old fashioned rolled oats
1 ½ cup sliced almonds
1 teaspoon sea salt
1 teaspoon cinnamon
1 teaspoon orange zest
1/2 cup olive oil or coconut oil, melted
1/2 cup pure maple syrup or honey
1 teaspoon almond extract
2/3 cup unsweetened shredded coconut, optional
1/2 cup chocolate chips or dried fruit, optional
Preheat the oven to 350 degrees Fahrenheit.
Add oats, almonds, salt, cinnamon, and orange zest in a large bowl. Stir to combine.
Add oil, maple syrup or honey, and almond extract. Stir to combine.
Add coconut and mix together.
Spread on a cookie sheet lined with parchment paper.
Cook for a total of 20-25 minutes until browned, removing every 10 minutes to mix so granola cooks evenly.
Remove from oven and let cool. Stir in chocolate chips, fruit, or any additional toppings.
Serve immediately or store in an air-tight container at room temperature.
