Blueberry Lemon Blondies

If you’re a fan of lemon desserts then you are going to love these Lemon Blondies.  And just when you thought these super soft and moist lemon bars couldn’t get any better, we added blueberries and topped them with a lemon glaze making them the best summer treat ever!

How to make Blueberry Lemon Blondies

Now that you’re craving these delicious blondies, here’s how you make them.

First, we need to make the blondies.  Start by preheating the oven to 350 degrees. Spray a 9×9 baking pan with cooking spray or line with foil and set aside.

In a large mixing bowl, beat together butter, sugar, and lemon zest until light and fluffy. Add eggs, one at a time, and continue to mix. Next stir in lemon juice, flour and baking powder and continue to mix until well combined.  Stir in blueberries.

Pour batter into prepared pan and smooth into an even layer. Bake for 25 minutes, or until a toothpick inserted into the blondies comes out clean. Let blueberry lemon blondies cool for 10-15 minutes.

To make the glaze, whisk together powdered sugar, lemon juice, half and half, and lemon zest. Pour over cooled blondies and spread evenly to coat. Let blondies cool completely before slicing and serving.

Tips for making Blueberry Lemon Blondies

  • I baked my blondies in a 9×9 pan making them nice and thick but feel free to bake them in a 9 x 11 baking dish if you’re feeding a crowd.
  • Make sure you add the eggs one at a time and don’t over mix the batter.
  • Serve these delicious blondies warm.  They taste so much better warmed up a little.

I do have a confession –  I ate these blondies for dessert and I also had them for breakfast two days in a row.  I’m pretty sure I could eat these for breakfast with my coffee every day and be very happy.  Even my hubby loved them and he isn’t a fan of lemon desserts. 

These blondies really are the perfect summer dessert!

Ingredients
  

Blueberry Lemon Blondies:

  • 11 tablespoons salted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 3 tablespoons fresh lemon juice
  • zest of 2 lemons
  • 1 1/4 cups flour
  • 1/2 teaspoon baking powder
  • 1 cup blueberries

Lemon Blondie Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1-2 tablespoons half and half or milk
  • zest of 1/2 lemon
