Hubby was grilling and I was in charge of making a salad for us. I planned on making a caprese salad and then noticed that we had asparagus in the fridge and next thing you know – I tossed together this Asparagus and Corn Carpese Salad.
And, let me tell you – it tastes AMAZING! I’m so happy that we have some leftover because I might just eat this every day for the rest of my life. That’s how good it is.
I highly recommend adding all the ingredients to your grocery list and making this salad this weekend. It’s the perfect summer salad. It’s so good that you might not want to share and I don’t blame you. I would just suggest making two salads. One for yourself and one to serve with dinner.
Asparagus and Corn Caprese Salad
Ingredients
- 1 container cherry tomatoes halved
- 8 ounce package mozzarella pearls
- 2 cups sweet corn
- 1 pound of asparagus chopped
- 10-15 leaves of fresh basil - chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
Instructions
- Add tomatoes, mozzarella, corn, asparagus and basil to large bowl. Mix with large spoon.
- Mix oil and vinegar in small bowl or cup. Pour over veggies and cheese.
- Season with salt and pepper.
- Serve immediately or store in refrigerator in airtight container.
