Two days of healthy meals under $20 – Do you think it can be done?

Well, I’ll be honest, when Harris Teeter challenged me to create two days of healthy meals with a budget of $20, I thought they were crazy.  How the heck could I make 6 meals for $20?  Well, guess what?  I’m always up for a good challenge so I went to work planning my meals and I came in under budget with a healthy and delicious meal plan full of organic ingredients.

The first thing I did was look on my Harris Teeter App to check the weekly sales.  They have so many great items on sale that I made sure to buy only sale items.  I also decided that it would be best to make a meatless dish.  We all know meat can get expensive no matter where you shop so we made Sweet Potato and Black Bean Tacos.  You still get the protein along with the great taste of regular tacos.

Peanut Butter Banana Waffles

Day 1:

Breakfast – Flaxseed Waffles with Peanut Butter and Bananas

Let me just tell you all that this is the best breakfast ever and it’s easy which is exactly what I need.  Just pop the waffles in the toaster.  Spread a tablespoon of peanut butter over the waffle and top with slices of banana.

Chickpea Salad

Lunch – Balsamic Chickpea Salad

Another quick and easy recipe.  I love this salad because I can make it on Sunday and have it for the entire week.

Italian Sausage Skillet

Dinner – One Skillet Italian Sausage Pasta

This is such a quick dinner to make on busy week nights and only requires 6 ingredients.  I used HT Organics Whole Wheat Pasta along with HT Organics Diced Tomatoes and HT Organics Tomato Sauce to make this 20 minute skillet meal.  Everything is cooked in one pan, which also means less dishes to clean.  Stay tuned because I’ll be posting this recipe soon.

Day 2:

Breakfast – Flaxseed Waffles with Peanut Butter and Bananas

I could eat this every day for breakfast!  Sometimes I switch things up and add blueberries and strawberries.  All I can say is YUM!

Okay, now we get to talk about these delicious Sweet Potato and Black Bean Tacos.  Let me just tell you – these are AMAZING!  Forget the ground beef and chicken, sweet potatoes and black beans are bursting with flavor.  I promise you won’t even miss the meat.

The best part about this recipe is that it’s inexpensive and easy to make.  Another great weeknight recipe to make after a busy day.

Sweet Potato and Black Bean Tacos

Swap out the meat for sweet potatoes and black beans in this delicious recipe.  An easy vegetarian recipe that the entire family will love.  Perfect for taco Tuesday and every night of the week.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large sweet potato cut into 1 inch pieces
  • 1 can HT Organics Black Beans
  • 1/2 can corn drained
  • 2 tablespoons taco seasoning
  • small tortilla wraps
  • favorite taco toppings - tomato onion, shredded cheese, salsa, cilantro (optional)

Instructions
 

  • Heat oil in medium skillet.  Add diced sweet potatoes and cook for 10-12 minutes over medium heat.
  • Reduce heat.  Add beans, corn and taco seasoning.  Stir to mix ingredients together.  Cook for 10 minutes.
  • Add mixture to tortilla wraps and top with favorite toppings
  • Enjoy!
