Have you started making your plans for Memorial Day weekend?  We have family coming into town so we will definitely be firing up the grill and relaxing on our patio.  And, I’m pretty sure it’s a rule that you can’t grill out on Memorial Day with serving potato salad.

So, guess what?  I’ve decided to make the ultimate potato salad – Loaded Baked Potato Salad.  This isn’t your regular potato salad.  This potato salad recipe is loaded with bacon, cheese, sour cream, and of course, potatoes.  It’s just like eating a loaded baked potato!

 Ingredients needed to make Loaded Baked Potato Salad:

Seven ingredients is all you need to make this delicious salad.  It’s just like eating a loaded baked potato.  The first ingredient is obviously potatoes.  Then, you just mix in bacon bits, mayo, sour cream, green onions and shredded cheese – lots of Black Creek Sharp Cheddar Cheese.  Add salt and pepper and you have the perfect side dish for all your summer barbeques.

How to make Loaded Baked Potato Salad:

Loaded Baked Potato Salad Recipe

Ingredients
  

  • 10 medium sized red skin potatoes cut into 1/2 pieces
  • 8 slices of bacon cooked and crumbled
  • 1 cup sour cream
  • 1/2 cup mayonnaise or plain Greek yogurt
  • 1 cup extra sharp cheddar cheese shredded
  • ¼ cup fresh chives chopped
  • Salt and pepper to taste

Instructions
 

  • Place red potatoes in large pot. Fill with water until potatoes are just covered.  Add a teaspoon of salt to water, if desired.  Heat to boiling and simmer 8 to 10 minutes or until potatoes are tender.  Drain potatoes and rinse with cold water until cool.  Set aside.
  • In large bowl, whisk together sour cream, mayonnaise, salt and pepper.
  • Add cooled potatoes to bowl and mix until potatoes are evenly coated.
  • Mix in crumbled bacon, shredded cheese and green onions.  Gently stir to combine.
  • Serve immediately or cover and refrigerate until ready to serve.

Notes

  • If made ahead of time, potatoes may dry out a little.  Add a few tablespoons of sour cream right before serving.
  • Can be served cold or heated up for a warm side dish.
