I have the best breakfast recipe to share today.  We had family in town for New Year’s and my fabulous sister-in-law whipped up this delicious breakfast casserole full of sausage, potatoes, bell peppers, cheese and eggs.  How can you even go wrong with all of those ingredients?

Growing up my mom always made breakfast casseroles for breakfast on holidays.  Now she makes them every time we are visiting for the weekend.  It always gets us all together to enjoy a nice breakfast as a family.  And, that’s exactly the memory I want my boys to have.  I want to them to grow up remembering our family meals together.  It also helps that your house smells amazing first thing in the morning.

This is the perfect holiday breakfast to fix for a large crowd.  But, don’t feel like you have to make it just for a special occasion.  I think it’s perfect for any weekend.  Plus, you’ll have plenty left over.  I think I’m going to start making this for breakfast on Sunday and then we can have it for breakfast throughout the week – unless you have a house full of people.  Then, be prepared for it to disappear quickly because it’s that good.  And, don’t feel like you can only have this Sausage, Egg, Potato Breakfast Casserole for breakfast.  This would be a delicious dinner too.

How to make Sausage, Egg, Potato Breakfast Casserole

Want to make this Sausage, egg, potato casserole for breakfast?  Of course you do!  This delicious breakfast casserole only takes 10 minutes to prepare.  Start by cooking sausage in pan.  Add green peppers, red peppers, onion and garlic to the same pan and cook for an addition 5 minutes.  Add half of the hashbrowns to baking dish. Sprinkle half of the sausage mixture evenly over hashbrowns. Sprinkle 1 cup of cheese over sausage and hashbrowns.  Layer remaining hashbrowns, sausage mixture, and cheese.  In seperate bowl, whisk eggs, milk, salt, pepper and red pepper flakes together. Pour egg mixture over potatoes, sausage, and cheese in baking dish.  Then just bake in the oven until eggs are fully cooked.  That’s it!  Now you have a delicious breakfast casserole the entire family will love.

Ingredients
  

  • 1 pound breakfast sausage I used turkey sausage
  • 1 green pepper diced
  • 1 small onion diced
  • 1 red pepper diced
  • 2 teaspoons minced garlic
  • 3 cups cubed hash brown potatoes thawed
  • 6 eggs
  • 1/3 cup milk
  • salt and pepper to taste
  • 1/2 teaspoon red pepper flakes
  • 2 cups cheddar cheese divided
  • green onions for garnish

Instructions
 

  • Heat oven to 400 degrees and spray 9 x 13 baking dish with cooking spray.
  • Cook sausage over medium-high heat until no longer pink. Add green peppers, red peppers, onion and garlic to pan and cook for an addition 5 minutes.
  • Add half of the hashbrowns to baking dish. Sprinkle half of the sausage mixture evenly over hashbrowns. Sprinkle 1 cup of cheese over sausage and hashbrowns.
  • Layer remaining hashbrowns, sausage mixture, and cheese.
  • In medium bowl, whisk eggs, milk, salt, pepper and red pepper flakes together. Pour egg mixture over potatoes, sausage, and cheese in baking dish.
  • Bake for 35 - 40 minutes or until eggs are fully cooked.
  • Sprinkle with green onions and serve. Enjoy!

  1. Love this casserole! Have a question about freezing. Can you mix this up and put into smaller dishes and freeze to cook later? Or is it better to cook it first and freeze after it’s cooled?

  2. This is a delicious casserole!
    I added mild diced green chilies, one teaspoon garlic and chili seasoning, small can mushrooms. I used 3 leftover baked potatoes shredded, and Jimmy Dean turkey sausage links. Next time I will definitely add red bell pepper.
