If you ask my hubby what his favorite meal is he will say Thanksgiving dinner.  He LOVES turkey and would probably eat it every day if I made it for him.  I’m sure many people would agree that Thanksgiving dinner is their favorite meal of the year.  But, why just have it on Thanksgiving?

I’ve made Thanksgiving dinner easy with this delicious Thanksgiving Dinner Casserole.  The best thing about this recipe is that you cook the turkey ahead of time.  I cooked a small turkey in the slow cooker on Sunday and had plenty of turkey for lunches and this quick casserole.  That’s a win – win.  Hubby can eat turkey all week and dinner prep is a breeze.

You’ll find all your favorite Thanksgiving fixings in this casserole – turkey, stuffing, mashed potatoes, gravy and more!  I decided to share this recipe the day before Thanksgiving because it’s also a great way to use up Thanksgiving leftovers.

Make this casserole after Thanksgiving or all year long – either way, everyone will love it!

Everyone loved this Thanksgiving Dinner Casserole.  Connor even wanted seconds and he eats like a bird.  The dried cranberries are totally optional.  I love the sweetness they add to the meal but Connor picked them off.  Next time I might add fresh cranberry sauce to see how that tastes.  I’m just a sucker for anything that combines savory and sweet.

And one more tip – make extra gravy because this dish definitely tastes better with lots of gravy drizzled over it.

Ingredients
  

  • 4-5 cups mashed potatoes
  • 1 15 ounce can of corn
  • 3 cups cooked turkey
  • 2 cups of gravy divided
  • 1 box of stuffing prepared
  • 1/2 cup dried cranberries

Instructions
 

  • Preheat oven to 350 degrees. Spray 9 x 13 baking dish with cooking spray.
  • Add mash potatoes to baking dish and spread evenly along the bottom of the dish.
  • Sprinkle corn over mashed potatoes.
  • Add a layer of turkey over mashed potatoes and corn.
  • Drizzle 1 cup of gravy over turkey.
  • Top turkey with stuffing.
  • Bake for 25-30 minutes
  • Sprinkle dried cranberries over stuffing.
  • Serve with extra gravy.
