My hubby is obsessed with all things pumpkin. And, when I say obsessed, I mean obsessed. He loves pumpkin food, pumpkin beer, pumpkin bath products, pumpkin candles – ALL things pumpkin! So, I surprised him with these delicious Pumpkin Spice Magic Cookie Bars.

Now, I’ll be the first to admit that some pumpkin treats don’t have a strong pumpkin flavor but these Pumpkin Spice Magic Cookie Bars have the perfect amount of pumpkin spice in every bite, making them our favorite new pumpkin spice dessert.

I could go on and on about how delicious these cookie bars are but I think you just need to make them for yourself. If you love all things pumpkin spice as much as my hubby does, you’re going to love these Pumpkin Spice Magic Cookie Bars. Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter
  • 1 14 oz can sweetened condensed milk
  • 1/3 cup pumpkin puree
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 cup sweetened flaked coconut
  • 1 cup chopped walnuts
  • 1 cup chocolate chips
  • 1 cup pumpkin spice morsels

Instructions
 

  • Preheat oven to 350 degrees and grease or line 9x13 inch baking pan with foil.
  • Melt butter in small sauce pan. Stir in graham cracker crumbs until combined. Press into the bottom of baking pan.
  • In medium bowl, whisk together condensed milk, pumpkin, and spices.
  • Pour mixture over graham cracker crust.
  • Sprinkle coconut, nuts, chocolate chips, and pumpkin spice morsels evenly over pumpkin condensed milk mixture. Press toppings gently down with your hands or spatula.
  • Bake for 25 minutes or until the top is golden brown.
  • Allow to cool before slicing.

  1. Can’t find the pumpkin spice morsels anywhere. Do they even still make them? I found pumpkin spice filled truffle chunks for baking, would that work?

I tried to make this (with chocolate salted caramel chips instead of pumpkin spice since I couldn’t find them) and while I think the flavors are delicious, there definitely seems to be a missing ingredient. There needs to be a dry ingredient to thicken the sweetened condensed milk and pumpkin puree, otherwise it’s very runny and soupy even with extra cooking time. As mentioned in another comment, I think flour to bind the ingredients during cooking would help.

  3. Did you use solid pack pumpkin or the premix for pies? Mine was not runny at all.. make sure you use solid pack pumpkin

  4. This recipe definitely needs to be redone. Followed it to the letter and it’s all soupy. The author of this needs to re post this with the actual ingredients used to make it look like the picture

  5. I love these. I had no luck finding the pumpkin morsels, so I used caramel ones like sometime else suggested. I felt like the 9×13 was too large, so I pivoted and used a 9×9 pan for everything. It took longer to cook because it was now a thicker bar, but they came out great. I definitely recommend cooking them in the fridge once they’re room temperature before trying to cut them.
