This dessert was, of course, inspired by my favorite Girl Scout cookies and is the best dessert I’ve had in a long time.

Why eat the cookies when you can have cheesecake that tastes like a Samoa?!

Sara Lee Cheesecake

My birthday is on Wednesday and since my hubby is deployed, I decided to treat myself to a few of my favorite things while shopping at Food Lion last week.  Ok – that’s kind of a lie – I would have bought these things even if my husband was home.  I love sunflowers, wine and cheesecake and it makes me happy to drink wine while eating cheesecake with pretty sunflowers on my dining room table.

The other night, as I was eating the last Samoa cookie, it hit me – I needed to make a Samoa Cheesecake.  And I made it super easy by using a Sara Lee Classic Cheesecake.  The thought of making a homemade cheesecake is a little intimidating plus I don’t have a spring form pan so using a Sara Lee cheesecake is definitely the way to go.  Plus, I was able to make this tasty cheesecake in less than 15 minutes.

Woohoo!  You can’t beat that.  Another easy dessert that tastes great.

Ingredients
  

  • 1 Sara Lee Original Cheesecake
  • 2 cups shredded coconut
  • 1/2 cup caramel sauce
  • 1/2 cup mini chocolate chips
  • chocolate and caramel sauce

Instructions
 

  • Preheat oven to 325 degrees. Spread coconut on baking sheet and bake in oven for 5 minutes. Remove from oven and mix coconut. Bake for an additional 3-5 minutes or until all coconut is toasted.
  • Once coconut cools, mix with 1/2 cup caramel sauce. Spread over top of cheesecake.
  • Sprinkle mini chocolate chips over coconut mixture.
  • Drizzle chocolate and caramel sauce over cheesecake
  • Refrigerate until you're ready to serve.

Samoa Cheesecake

I’m pretty sure it’s save to say that you can’t go wrong with any recipe that includes toasted coconuts, caramel, and chocolate, specially when you serve it over cheesecake.  I invited the girls over for wine and cheesecake Saturday night.  At first I didn’t even want to cut into the cheesecake because it looked so pretty.  Then it was really hard to only eat one piece.  Thank goodness we finished it all on Saturday or I would have had cheesecake for breakfast on Sunday.
