Sweet and Savory Roasted Carrots

I love roasted vegetables.  Over the past few weeks I’ve been making a huge batch every Sunday to eat for lunch throughout the week.  I was ready to switch things up a little so I decided to make these sweet and savory roasted carrots this week.  This recipe is great because it’s easy, only requires a few ingredients and tastes great.  And, it’s the best recipe for feeding a large crowd or if you want quick lunches for the week.

The name alone should make your mouth water.  Carrots roasted in a sweet, buttery sauce – YUM!  Can you really go wrong with any recipe that only calls for 5 ingredients?

This is a great everyday recipe that anyone can make and doesn’t require any cooking experience.  If you can peel carrots, you can make these roasted carrots and they’re the perfect side dish for any meal.  Your family will be amazed at how great these carrots taste.

Ingredients
  

  • 2 lbs medium carrots peeled
  • 3 tablespoons unsalted butter melted
  • 2 tablespoons Truvia Spoonable
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • 1. Preheat oven to 400 degrees.
  • 2. Toss carrots, melted butter, Truvia Spoonable, salt, and large ziplock bag and shake until carrots are evenly coated.
  • 3. Spread carrots on baking sheet and bake for 15 minutes. Mix carrots to redistribute on pan and bake for another 5-10 minutes or until carrots are tender.

I’ve also made a similar recipe but instead of carrots, I use sweet potatoes.  Add a little pecans and you have another delicious recipe.  Once you try these roasted sweet potatoes, you won’t want to stop eating them.  This is another simple recipe that can be made ahead of time and great for leftovers throughout the week.

Roasted Sweet Potatoes

Roasted Sweet Potatoes

  • 4 sweet potatoes – cut into 1 inch cubes
  • 4 tablespoons butter
  • 2 tablespoons Truvia Spoonable
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup chopped pecans

Directions:

Step 1:  Preheat oven to 350 degrees

Step 2:  Melt butter in saucepan.  Add Truvia Spoonable, salt and pepper and stir until well combined.  Add sweet potatoes to sauce pan and mix until potatoes are evenly coated.

Step 3:  Spread sweet potatoes in a single layer on baking sheet.

Step 4:  Roast for 20 -30 minutes or until tender.
