No-Bake Energy Bites

I don’t know about you but I barely have enough time to eat a healthy breakfast in the morning.  I need something that I can quickly grab on my way out the door which usually means I’m eating something that is full of sugar or nothing at all.  But now I’ve started making these No-Bake Energy Bites and I’m hooked on them.  They are the perfect breakfast when you have about 5 minutes to eat or while you’re eating in the car on the way to work (like me).

There are a lot of recipes on Pinterest and all over blogland for these energy bites which is what finally inspired me to make them.  I wanted a breakfast that I could eat at 7 am that wouldn’t leave me starving by 9 am and my hubby wanted something that he could eat before going to the gym.  This was the perfect solution.  Connor even likes to snack on them after school while doing his homework.

Ingredients
  

  • 1 cup quick oats
  • 1 cup Kashi cereal
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots cut into smaller pieces

Instructions
 

  • 1. Stir all ingredients together in medium bowl.
  • 2. Roll into 1 inch balls. (Makes about 15 - 20 energy bites)
  • 3. Store in airtight container and keep refrigerated.
