Couscous and Herb Salad

I’m so exciting to be participating in The Secret Recipe Club this month.

It’s my first month and it was so much fun!  What is The Secret Recipe Club? It’s an awesome way to not only find but share new blogs. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe (or more) to make, photograph, and then will draft up a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose. It’s such a fun experience and it’s a great way to get new followers, too. couscous salad

I was assigned Manu’s fabulous blog, Manu’s Menu.  Her site is full of delicious recipes!  I wanted to try so many of them but I chose to make the Couscous and Herb Salad.  I chose this recipe because I love making salads on Sunday that I can pack for lunch all week and this was the perfect recipe!  It tastes fabulous and was super easy to make.

Ingredients:

Couscous Salad:

  • 1 box (8.8 oz.) couscous, cooked per package directions and cooled
  • 2 tbsp basil leaves, chopped
  • 3 tbsp parsely leaves, chopped
  • 2 tomatoes, seeded and chopped
  • 2 or 3 spring onions, chopped

Vinaigrette:

  • 3 tbsp lemon juice
  • 1 tbsp honey
  • 3 tbsp extra virgin olive oil
  • Salt to taste
Instructions:
Step 1:  Mix couscous, herbs, tomatoes and spring onions in bowl.  (I am not a fan of onions so I used cucumbers instead)
Step 2:  Prepare the vinaigrette by mixing honey, extra virgin olive oil, lemon juice and salt in a small bowl.

Step 3:  Add vinaigrette to couscous.

  1. I make a version of this all summer long with pasta or on bread so digging the idea of making a couscous salad like this.

  3. Couscous is such a handy ingredient to have around. Especially if you can make dishes like this one. YUM!
