Easy One Pot Burrito Bowls

What do you get when you combine ground turkey, taco seasoning, rice, and all your favorite taco toppings into one pan?  You get One Pot Burrito Bowls.   This one pot meal has become my new favorite meal to make for Taco Tuesday.

Can you go wrong with a recipe that has the words one pot and burrito in the title?

I don’t thinks so either.

This recipe is a giant burrito in one pan which means it’s easy to make and clean up is a breeze.  You pretty much just need to dump the ingredients in the pan and mix it together.  Then cover it up and everything cooks together while you get to relax with a glass of wine.  Then 30 minutes later, your dinner is ready!

How to Make One Pot Burrito Bowls

First, heat olive oil in a large pan.  Add onions, green peppers, and garlic to pan.  Saute for 2-3 minutes or until onions are brown. Add in ground turkey (or ground beef) and cook until browned.  Drain grease.

Nest, stir in black beans, corn, tomatoes with green chiles, rice, taco seasoning, and red pepper flakes. Pour in chicken stock and stir to combine ingredients.  Bring liquid to a light bowl over medium heat.Cover pan and simmer on low heat.  Cook for 15- 20 minutes or until rice is tender.  Season with salt and pepper to taste.

Remove pan from heat. Sprinkle with cheese and cover for an additional 2-3 minutes to melt cheese. Serve with all your favorite burrito toppings. We like to add shredded lettuce, salsa, sour cream and guacamole to our individual burrito bowls.  I also like to eat mine with tortilla chips instead of a fork.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey or ground beef
  • 1/2 green pepper
  • 1/2 sweet onion
  • 1/2 teaspoon garlic
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 can tomatoes with green chiles
  • 2 cups chicken broth
  • 1 cup minute brown rice
  • 1 1/2 tablespoons taco seasoning
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
  • 1 cup cheese
  • optional toppings - tortilla chips salsa, lettuce, sour cream, guacamole, tomatoes, green onions, jalapenos

Instructions

  • Cover pan and simmer on low heat.  Cook for 15- 20 minutes or until rice is tender.  Season with salt and pepper to taste.

  • Serve over lettuce with your favorite toppings.
