Full of flavor, this one pan meal tosses cheese tortellini with mixed veggies.  Add your favorite pasta sauce and your meal is complete. 

This is a delicious Meatless Monday dinner if using cheese tortellini and the perfect week night meal if you need to have dinner on the table quickly.  It’s also the ideal dinner for Friday night when you don’t feel like cooking after a long week.

What I love about this recipe is that everything cooks in one pot all at the same time in about 20 minutes. And, it’s loaded with fresh veggies. I chose to add zucchini, yellow squash, carrots, and broccoli but you can add any of your favorite veggies.

How to make Tortellini Primavera

This delicious comes is prepared in 3 simple steps!

First, add vegetables, tortellini, pasta sauce, and water to large pan.  Cover and cook over medium heat for 20 minutes or until tortellini and vegetables are tender. Remove from heat and sprinkle with Parmesan cheese.

Ingredients
  

  • 1 zucchini
  • 1 yellow squash
  • 1 cup carrots chopped
  • 2 cups broccoli florets
  • 1 jar of your favorite pasta sauce
  • 1 cup water
  • 2 cups cheese filled tortellini
  • 2 tablespoons Italian seasoning
  • 1/2 cup Parmesan cheese

Instructions
 

  • Add vegetables, tortellini, sauce, and water to large pan.
  • Cover and cook over medium heat for 20 minutes or until tortellini and vegetables are tender.
  • Remove from heat and sprinkle with Parmesan cheese.

  3. Absolutely delicious and cooked up quickly! I did add some vegetarian beef bouillon and I used to tomato sauce and increased the water as that’s what I had on hand to use up . Very versatile recipe ! Thank you!
