What’s not to love about that?!

This chicken salad with grapes and pecans is an easy salad to have in your refrigerator for quick lunches throughout the week and is the perfect salad recipe for bridal showers, baby showers, brunches, luncheons, and so much more.  It’s even a great dinner recipe for busy weeknights.

Chicken Salad Ingredients

Chicken: cooked and shredded

Mayonnaise or Greek Yogurt: You can add one cup of mayo, one cup of Greek yogurt or a half cup of each.  This is totally up to you and what you prefer.

Grapes: Adds just the right amount of sweetness.  I prefer red grapes to add a little color to the chicken salad.

Celery: Adds a little crunch to the salad.

Pecans: I like to add pecans to my chicken salad but feel free to add almonds or walnuts.  Omit if allergic to nuts.

Lemon Juice: Just a splash for extra flavor.

Seasonings: Salt and pepper to taste plus a little poultry seasoning.

Parsley: For more flavor and freshness.

How to Cook Chicken for Chicken Salad

I usually use a rotisserie chicken from the grocery store when making my chicken salad because it makes it so much easier but I want to share a few other options for cooking your chicken to use in this chicken salad recipe.

Baked: Season chicken with salt and pepper and bake for 25 minutes at 400 degrees F or until chicken reaches an internal temperature of 165 degrees F.

Slow Cooker: Place chicken in slow cooker.  Add 1/2 cup of chicken broth.  Cover and cook on low for 3-4 hours.

Instant Pot: Place chicken in Instant Pot.  Pour 1 cup chicken broth or water over chicken.  Cover with lid and set Instant Pot to pressure cook on high for 1o minutes.  Natural pressure release (NPR) for 5 minutes and vent the pot before shredding.

Poaching: Bring chicken broth to a simmer over medium high heat.  Place chicken in pot, cover, and cook until chicken reaches an internal temperature of 165 degrees F.

How to Make Chicken Salad with Grapes and Pecans

Add chicken, celery, grapes, and pecans to large bowl.  Add mayonnaise and/or Greek yogurt, lemon juice, salt, pepper, poultry seasoning, and parsley to bowl.  Mix until well combined.

And, your chicken salad is ready! Refrigerate until ready to serve.

  • 1 cup red seedless grapes halved
  • 1/2 cup pecans
