If you love easy breakfast recipes, you’re going to love this recipe for Berry Baked Oatmeal!  I am always on the lookout for easy and healthy breakfast recipes that I can grab quickly in the morning and this is definitely a family favorite.  The best thing about this recipe is that you can make it ahead of time and enjoy it all week long.  And, it’s also the perfect recipe for a brunch or if you have guests at your house.

What is Baked Oatmeal?

Baked oatmeal is a warm breakfast casserole made using the same ingredients as the classic oatmeal recipe: oats, liquid, toppings and spices. The best thing about baking oatmeal is that you end up with an oatmeal dish that is crunchy on the outside and warm and gooey in the middle.  The crunchy top, the fruity bites from the berries, and also the crunchiness from the nuts creates a flavorful breakfast that’s bursting with flavor and full of texture. Oh, and did I mention that you only need 2 minutes to mix everything together, and then you pop it in the oven and let it bake for another 20 making it a quick and easy breakfast bake.

This recipe allows you to make big batches and freeze them for later making it a great meal prep recipe. Make a big batch of this oatmeal on Sunday, portion it in airtight containers, and store it in the fridge for up to 4 days. In the morning, grab a piece, warm it up in the microwave and serve it with either a big dollop of Greek or coconut yogurt.

Ingredients for berry Baked Oatmeal

  • Oats – you can use rolled oats or old fashioned oats. If you are gluten-free make sure to use certified gluten-free oats. I don’t recommend instant oats because your baked oatmeal will turn out very mushy.
  • Almond butter – because this is an egg-free recipe, there’s nothing holding together the oats so we are using almond butter as a binder together with the honey. You can swap the almond butter for your favorite nut butter like peanut or cashew butter.
  • Coconut oil – I used organic cold-pressed coconut oil but you can use any neutral tasting oil like vegetable oil.
  • Baking Powder – lifts it up.
  • Sweetener – you need something sweet and sticky like agave syrup, maple syrup, brown rice syrup, or even honey.
  • Liquid – you can use milk or water. I prefer using creamy milk like soy or coconut for this recipe.
  • Almond flakes – you can play around with your nuts and use pecan nuts, walnuts, or chopped up almonds instead of the almond flakes.
  • Berries – you can use fresh or frozen berries straight from the bag.
  • Vanilla, cinnamon, and a pinch of salt – adds extra flavor.

How to make this healthy breakfast

  1. First, you need to mix the coconut oil, honey, almond butter, and milk together. Melt them over the stovetop, cook, and stir for one minute until everything is well incorporated. Let it cool for 5-10 minutes. You can also microwave the mixture for 1-2 minutes until the oil is fully melted.
  2. In a large mixing bowl add your rolled oats, the baking powder, cinnamon, salt, and almond flakes. Pour over the (now cooled down) almond butter mixture and mix well. Add the blueberries and mix to incorporate.
  3. Grab a 9×9 baking pan, lay some parchment paper, and add your oat mixture to the pan. Press down with a spatula and bake at 350ºF for 20-30 minutes until the top becomes golden brown. Do not overtake for a deliciously moist and soft texture.
  4. Let it cool for 5-10 minutes and cut into squares. Serve with a big dollop of your favorite yogurt, some freshly sliced bananas, and a drizzle of maple syrup. Enjoy!

Healthy Baked Oatmeal Tips

Switch it up – I used blueberries in this recipe but I’ve made it with mixed berries and you can easily use any fruit you like. You can mix up the spices, nuts, and seeds as well. Some of my favorite options are:

  • Berries (other than blueberries, like raspberries and strawberries or a mixture of all berries).
  • Peaches, bananas, or apples.
  • Cashews, pecan nuts, walnuts, and hazelnuts.
  • Cinnamon, nutmeg, allspice, lemon zest + juice, and vanilla extract are all amazing flavor enhancers.
  • Make it extra fancy by adding chocolate chips, dried cranberries, or some chia seeds for those omega-3 fatty acids.

What kind of oats are best for baking? I love using rolled oats as they are made 100% from whole grains. Some popular good brands are Bob’s Red Mill and Quaker.

Do you need to refrigerate the baked oatmeal? This recipe does not contain any eggs or dairy so you can just store it in an airtight container on the counter (depending on how cool your kitchen is) but you can also store it in the refrigerator for a few days and it will last longer. You can also make big batches of this baked oatmeal, portion it and store it in the freezer for a couple of months. To enjoy just let it defrost overnight in the fridge and then warm it up in the microwave (method below).

Can baked oats be reheated? Yes, I often make a big batch of baked oats, keep it in the fridge and enjoy it every day for a week. To reheat, place it in the microwave and reheat for 2-3 minutes until hot throughout. You can also enjoy it cold alongside a glass of almond milk and some fresh berries.

  • ¼ cup natural almond butter
  • ¼ cup coconut oil
  • ¼ cup honey
  • ¼ cup milk
  • 4 cups rolled oats
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • ½ cup almond flakes
  • 1.5 cups frozen blueberries or fresh

Instructions
 

  • Preheat the oven to 350ºF and line a 9×9 baking dish (or similar) with parchment paper.
  • In a small pot mix together the almond butter, coconut oil, honey and milk and bring to a boil or microwave for 1-2 minutes until coconut oil has melted.
  • Remove mixture from stovetop or microwave and stir in vanilla extract. Stir until well combined. Let cool for 5 minutes.
  • In a large bowl, mix together the rolled oats, baking powder, cinnamon, salt, and almond flakes. Add the cooled down almond butter mixture and mix well to combine. Add berries and stir to combine.
  • Spread the oat mixture into the baking dish and press down with your spatula. Sprinkle some extra blueberries and flaked almonds on top.
  • Bake for 20-30 minutes or until the top is crisp and golden brown and the middle is set. Remove from the oven and let it cool for 10-15 minutes before cutting into squares and serving. Serve with a big dollop of yogurt, fresh fruit, and a drizzle of honey or maple syrup. Enjoy!
