My friend shared her protein pancake recipe with me over the summer and I’ve been making them ever since.

I added peanut butter and bananas to her recipe and made these delicious Peanut Butter and Banana Protein Pancakes.  We all love bananas and having Peanut Butter for Breakfast is a great way to add eight grams of protein and more than 30 essential nutrients and phytonutrients to your meal.

Not only do they taste great but I make a whole bunch every Sunday and breakfast is ready for the entire week.  Our mornings are so hectic that we need things that we can just grab and go.  Hubby and I eat ours in the car and Connor eats his while waiting for the bus.

Plus, studies show that people who enjoy a higher protein breakfast (35 grams) felt fuller, had fewer cravings and ate fewer high-calorie snacks at night compared to eating a lower protein cereal or skipping breakfast.

Ingredients
  

  • 1 cup of rolled oats
  • 1 cup of cottage cheese
  • 1/2 cup egg whites
  • 4 tablespoons peanut butter
  • 1 banana
  • 2 tsp cinnamon

Instructions
 

  • Mix all ingredients in blender.
  • Spray a nonstick griddle with cooking spray and place over medium heat. Pour about 1/4 cup of batter onto griddle. Flip pancakes over when edges look cooked and tops are covered with bubbles.
  • Serve warm.
