Cheddar Ale Dip with Pico De Gallo

A new restaurant opened up near our house and they have the best Cheddar Ale Dip.  The best part is the Pico De Gallo they add to it.

Hubby was having a few friends over Sunday for the Giants game and I decided it would be fun to try and recreate the Cheddar Ale Dip with Pico De Gallo.

And I must admit – the dip tasted AMAZING and was so easy to make.  Now I can make my favorite restaurant dip at home!

Cheddar Ale Dip with Pico De Gallo

Ingredients
  

  • 1 bottle of ale beer
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 4 oz Neufchatel cream cheese cut into pieces
  • 2 cups shredded cheddar cheese
  • 2 tablespoons spicy brown mustard
  • 1 tablespoon hot sauce
  • salt and pepper to taste
  • Pico De Gallo homemade or store bought

Instructions
 

  • Pour beer into bowl and stir to reduce carbonation.
  • Melt butter in saucepan over medium heat. Add flour and stir constantly for 2 minutes.
  • Slowly add beer and continue to stir.
  • Increase heat to medium high and slowly add cheddar cheese, cream cheese. Whisk until all cheese has melted.
  • Continue to stir and add mustard, hot sauce, salt, and pepper.
  • Pour into small bowl and add Pico De Gallo. Serve with soft pretzel bites, pita chips, carrots, etc.
