Chicken Stir Fry with Quinoa

I’ve got another delicious and healthy meal for you all this week. I love a good stir fry recipe! They are quick, easy, and I feel like you can’t mess them up. Plus, I love all the veggies that you can add. This time instead of rice, I decided to serve it over quinoa and I might never eat stir fry with rice again. It was that good!
Chicken Stir-Fry with Quinoa
Ingredients
- 1 tbsp canola oil
- 1 red pepper cut into strips
- 1 green pepper cut into strips
- 1 cup chopped carrots
- 3 chicken breasts cut into strips
- 1 can green beans drained
- 1/4 cup stir fry sauce
- 2 cups quinoa
- Soy sauce
Instructions
- Heat oil in a large skillet over high heat.
- Cook chicken in skillet until browned.
- Add peppers and carrots and cook for 5-7 minutes or until tender and chicken is done. Add green beans and stir fry sauce. Cook 3 minutes or until heated through.
- Meanwhile, cook quinoa according to package directions.
- Serve stir-fry over quinoa with soy sauce and enjoy!
