Mulligatawy soup is my all time favorite recipe. I could eat this soup once a week and never get sick of it.
I would always ask my mom to make it for me, especially on my birthday. Now everytime I go home, she makes it for me.
2-3 chicken breasts, cut into small pieces
1/4 cup butter
1/3 cup of flour
1/2 tsp. curry powder
1/2 teaspoon nutmeg
1 15 ounce can chopped tomatoes
5 cups chicken broth
1/4 cup diced onion
1/4 cup diced celery
1/4 cup diced carrot
1 green pepper, chopped
1 apple, chopped fine
Saute chicken breasts in butter. Add flour and stir together. Then add onion, carrot, celery, green pepper and apple. Add spices, tomatoes and chicken broth. Simmer for 1 hour.
Serve over rice and add salt and pepper to taste.
So easy and delicious!
